ARTICHOKE BRUNCH CASSEROLE Ingredients: 1 1/2 Cups Chopped Onion 1/2 Cup Butter, Melted and Divided 12 Large Eggs, Beaten 4 Cups Shredded Sharp Cheddar Cheese 2 (14 Ounce) Cans Artichoke Hearts, Drained and Quartered 1/2 Cup Ripe Olives, Sliced 3 Tablespoons Parsley, Minced 2 Garlic Cloves, Minced 3/4 Teaspoon Dried Oregano 1/2 Teaspon Dried Thymebr> 1/4 Teaspoon Ground Red Pepper 3/4 Cup Fine, Dry Breadcrumbs (Store Bought) Directions: Cook onion in 1/4 cup plus 1 tablespoon butter in a large skillet over medium-high heat, stirring constantly until tender. Combine onion mixture, eggs and next 9 ingredients in a large bowl; stire well. Pour into an ungreased 13x9 inch pan. Combine remaining 3 tablespoons melted butter and bread crumbs in a small bowl; stir well. Sprinkle over egg mixture. Bake at 350 degrees for 40 to 45 minutes or until set and golden.
